MAYALACT® Lactase Enzyme

Lactose intolerance is a common digestive system issue where the human body cannot digest lactose, known as milk sugar.

Mayalact® is a high purity food grade lactase enzyme produced by fermentation for the production of lactose-reduced or lactose-free milk and dairy products. Approximately 70% of the world’s population suffers from varying degrees of lactose intolerance. Thanks to the lactase enzyme, lactose is broken down to produce milk and dairy products that can be consumed safely for consumers with intolerance.

We have 3 types of lactase enzymes in our portfolio:

Mayalact® Liquid: neutral lactase enzyme to produce lactose free milk.

Mayalact® AC Liquid: premium lactase enyzme to produce lactose free milk and fermented dairy products without any change at process conditions.

Mayalact® AL: powder form of lactase enzyme to be used in food supplements, processed foods etc.

Technological advantages of Mayalact® AC:

  • Thanks to its resistance to low pH and high temperature norms, it is ideal for the production of lactose-free fermented milk products such as yoghurt and cheese.
  • With much less GOS (galactooligosaccharide) formation, more use is made of the high relative sweetness provided by glucose and galactose.
  • It provides the advantage of reducing the amount of sugar up to 30% in flavored or fruity milk, fruity yogurt and milk dessert recipes.
  • It is used to remove the sandy structure formed due to residual lactose in ice creams.

Another type of lactase enzyme in our portfolio is Mayalact® AL. Mayalact® AL is used in food supplements, ready-to-eat food mixes and processed foods. Protein mixtures containing whey proteins treated with Mayalact® AL can also be easily consumed by lactose-sensitive individuals.

Examples of non-dairy products that may contain additional lactose are instant breakfast mixes, beverage mixes, coffee whiteners, baby cereals, cake mixes, sausages, mayonnaise, ready-to-eat foods, and some processed foods.

Another approach is to use Mayalact® AL in dietary supplements as a digestive aid. Mayalact® AL is ideal for food supplements used in the treatment of lactose digestion, showing direct effects on the gut. It has been observed that digestion is easier when lactase supplement is taken before a meal.
